Low Carb Blue Cheese Meat Loaf with Buffalo Wing Sauce

for the Blue Cheese lovers

Ingredients:
- 2 lbs ground beef
- one container blue cheese crumbles
- 2 tablespoons bread crumbs
- 2 eggs
- 2 tablespoons parsley
- half an onion chopped fine
- 1/4 cup Buffalo Wing sauce
- 1/4 cup Salsa

1. in large bowl, combine beef, onion, blue cheese, parsley, eggs, and bread crumbs, mix well. in seperate bowl combine the salsa and buffalo wing sauce.
2. preheat oven to 350, spray meatloaf pan with Pam, and put meat mixture in pan.
3. Bake for 50 min. , then remove and with spatula preslice into serving sizes.

4. Spoon the salsa mixture over the top of the meatloaf.

5. Bake for additional 15 minutes
6. Remove and put on plate to cool.. serve or tupperware. Will be about 3-4 carbs per serving.

Extreme Couponing - Toothpaste

had to pick up one item food item at walmart today on way back from gym and did some extreme couponing on toothpaste. Last wednesday saw the weekly flyer for Kroger advertising aquafresh toothpaste 10 for $10 (you dont have to buy 10 you know, that just means $1 each, you suckers).. got on ebay then and bought a 20lot of aquafresh coupons $1 off each for .99cents total... came in mail today.. hit the walmart on way back from gym, went to my favorite cashier im friendly with, had 20 tubes of toothpaste... $2.64 regular price, marked down to $1each with price match, handed over the 20 coupons for $1off each...blaaam..FREE toothpaste... good to go for rest of year.

Low Carb Southwest Ranch Cheeseburger Recipe

This one is definately a keeper:

Ingredients:

- Ground Beef
- bacon (im using chicken bacon for this, all bacon tastes the same to me)
- Salsa, thick and chunky type
- Ranch dressing (the regular.. not the low fat..low fat =high carb)
- slices of pepperjack cheese
- optional.. some of my previously made Pico De Gallo


1. pretty simple.. form beef into patties and put on george foreman grill along with 2-3 strips of bacon per patty. when patties are done, put a slice of cheese on top to melt.. DO NOT CLOSE LID.. will be about 30seconds.

2. Put the patties on a plate, fold the bacon strips and put on top off the cheese.. add 1-2 tablespoons of the salsa, then about a tablespoon of the ranch dressing... Boom, Bam, Done... all too easy.

About 2 carbs or so per plate depending on what type of cheese you get.. You dont need a bun, thats where all the carbs are

This is how you work the coupons


heres how you work the coupons. hold off on your purchases at full price if you can and when there is a good deal you pounce.. top coupon is from a local Randalls grocery chain, 16oz bottle of salad dressing..thats their store coupon which brings price down from $2.50 to $1.19..thats an ok price, but then you can buy coupons on ebay like i did, bought a 20lot of the bottom coupon. So Randalls has a double coupon policy up to 50cents, this coupon will double to $1.00 off. You hand checker the store coupon first, then the manufacturers coupon which will double for an additional $1.00 discount and you get the bottle for 19cents.. says limit 3 so i will get 3 bottles, mrs.lexus will get 3 bottles.
   there are two Randalls stores on way to the gym, hit them both tomorrow, walk away with 12 bottles of dressing for about 2bucks..do it again on tuesday. stocked up for months.

5/26 Weekly Grocery Run

lets see how we did this week shopping low carb on a budget:

- 2 rolls papertowels, regular $2.68 <--- thats crazy, why would you pay that for one roll of paper towels.. price matched to 50cents each
- 2 18pack containers eggs, matched to 1.99 each
- blue cheese crumbles
- tomatoes, matched to .49cents/lb
- onions, matched to .25cents/lb
- bananas
- pack sugar free jello
- 32oz bag shredded cheese, $8.68 regular, matched down to 5.99
- 2 bottles diet soda, matched to .69each
- mustard, matched to .79
- 10 bottles Wishbone salad dressing..check this part out.. regular price $1.76 each, Sale price at local Randalls with store coupon is $1.19.. i bought 10coupons off of ebay for 99cents(yes , you can buy coupons off ebay)..each coupon is save $1.00 off a bottle of dressing.. so BLAAMM.. got 10 bottles today, matched down to $1.19, then $1.00 coupons...each bottle net cost .19 each....$1.90 total for those 10bottles

bottom line cost after price match and coupons = $33

again notice what we didnt buy, no snacks, nothing in a box (as in highly processed), no rice, no noodles, no bread, no hamburger helper, no chips, no cookies, no regular soda... all that stuff is high carb and probably high in high fructose corn syrup. dont blame your kids for having to buy garbage, you run the house. make a choice to stop eating garbage, stop eating those garbage carbs and you will likely lose 10 pounds in 2 weeks.

Low Carb Meatloaf with Tomatoes, Basil and Provolone Recipe

Ingredients:
- 2lbs ground beef
- 1 roma tomato (any type will do, this is what i had)
- 2 eggs
- 1 onion.. slice about 1/4 of it thinly , 3/4 of it chop fine
- 1/4cup Ragu "no sugar added" Pasta Sauce
- 2 teaspoons Worcestershire sauce
- 1/4 cup bread crumbs
- at least 4 slices Provolone cheese
- 1 tablespoon of a Taco Seasoning packet
- 1/2 teaspoon salt and pepper
- Basil, 1/2 cup chopped fresh basil if you dont mind spending more
1. In large bowl, combine the beef, chopped onions, eggs, pasta sauce, worcestershire, breadcrumbs, taco seasoning mix, salt and pepper. Preheat oven to 350. Slice the tomato thinly and set aside
2. Spray edges of meatloaf pan with Pam and transfer meat to pan and bake for 50minutes. after 50minutes, remove from oven. i then press a spatula into the meat to make slices where i will eventually divide into serving portions..easier to do it now than have to force it later. add sliced onions on top now, then tomato slices, sprinkle on basil, then add provolone cheese slices on top.
3. return to oven and bake for additional 10 minutes.

4. cheese will be melted or slightly brown.
5. transfer to plate to cool. divide up alont those spatula lines done earlier and serve or tupperware.

About 5 carbs per serving from the bread crumbs. Carbs from the "no sugar" pasta sauce are free since they come from vegetables.

This Weeks Grocery Run

- bottle Ragu No sugar added pasta sauce, price matched down to $1.29...read the label when you are store..no sugar and no high fructose corn syrup..perfect
- 4bottles diet sunkist for mrs. lexus, price matched down to .69 each
- tomatoes, price matched down to .50cents lb
- bananas, matched to .33 lb
- cauliflower
- cilantro
- pack no sugar jello
- fruit punch /lemonade containers
- 2packs kraft cheese slices, matched to $1.50 each
- package Provolone sliced cheese, matched to $1.77
- jar minced garlic
- bottle ranch dressing, matched to $1.29 then .50cent coupon
- 2 bags Pork skins
- jar Mayo, matched to 2.49 then .55cent coupon

total about $27.. again note what we did not buy, nothing in a box..generally if it comes in a box it is a processed food high in carbs and likely with high fructose corn syrup.. no rice, no candy, no chips, no potatoes, no corn (corn is for animals).. no bread, no cereal...just dont buy it so you dont have to tempt your willpower.. dont blame your kids for having to buy something you know is bad..you are the parent, you are supposed to be in charge. decide what your kids will eat unless you want fat kids.

Low Carb Spinach and Beef Lasagna Recipe

damn this one turned out good.. your typical lasagna recipe but swap out the high carb noodles for spinach leaves.

Ingredients:
- 2lbs ground beef
- one 15oz jar Ragu No Sugar Added pasta sauce
- one 15oz container ricotta cheese
- one 16oz jar Alfredo sauce
- one green pepper chopped fine
- one onion chopped fine
- bag of spinach leaves or raw spinach leaves
- 16oz bag of Mozzarella cheese (im using some mexican cheese since thats what my price match was for.."walmart" generic cheese tastes like ass to me)

1. In wok, brown the ground beef, drain liquid as it accumulates. when cooked, add teaspoon pepper, tablespoon italian seasoning, 1/2 teaspoon salt, and the pasta sauce.. stir well.
2. While meat is cooking, in another bowl, combine the chopped onion/green peppers with the ricotta cheese.
3. Using 13x9 inch baking dish, spray edges with pan. Spoon about 1/2 cup of the Alfredo sauce around the bottom, use spoon to smooze it around. Spread spinach leaves on top of the alfredo sauce to cover,

4. Add half the meat mixture on top of the spinach leaves, then half the ricotta mixture

5. then add half the shredded  cheese.
6. preheat oven to 350. repeat layering with more spinach, the meat, ricotta. Drizzle the rest of the Alfredo sauce on top then add the remaining shredded cheese. get some tin foil, spray one side with Pam. cover baking dish Pam side down.
Bake for 45 minutes, after 45min, remove the foil top and bake additional 20min
Lasagna i like reheated the next day, so let cool, cover with foil and refrigerate.. damn that looks tasty. less than 5 carbs per serving since their are no noodles,  depending how many portions you cut up.. should make at least 8 good size servings.

there you are..working out like a champion, leaving the gym in search of a healthy post workout meal. you swing by the nearest SmoothieKing http://www.smoothieking.com/ . i did just that today, never been in one, but received a coupon from blood drive for a free 20oz smoothie.. was really shocked when i looked over the nutritional menu in search of something low carb.. here is their nutritional menu smoothieking .. look at all those carbs..some of their drinks have over 100carbs..thats nuts..you just worked you ass off in the gym and now you drink down 100+carbs and spike your insulin. had only one selection i could get from that huge menu. Look at the "Gladiator"... have 3 more coupons.


look at this shake... 101carbs, 600calories... and no wonder you are still fat after all those months spent workingout.

Low Carb Italian Meatloaf With Green Peppers Recipe


Ingredients:
- 2lbs ground beef
- 2 eggs
- 2 green peppers chopped fine
- 1/2 onion chopped fine
- 1 teaspoon minced garlic
- 1/2can tomato paste
- 1/4 cup bread crumbs
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
Optional : No sugar added pasta Sauce
1. preheat oven to 375
2. Combine all ingredients in large bowl, pretty simple
3. spray edges of meatloaf pan with Pam and put meat mixture inside.

4. Bake for 1 hour. Remove and check with meat thermometer to see that interior is at least 145degrees. if not put back in oven for 10more minutes. when done i slice into 5 serving pieces

5. remove using those cool handles and transfer to plate to cool. like i said before, i like meatloaf better the next day reheated.. serving suggestion is to add 1-2 tablespoons of that Ragu no sugar added pasta sauce on top..maybe some shredded cheese or parmesan cheese. Carbs will be about 5 per serving coming from the bread crumbs.

about $20 bucks .. notice no processed foods (ie, nothing in a box).. no pasta, no potatoes, no regular soda, no cereal, no oatmeal, no corn, no bread, no rice, no hamburger helper, no chips, no popcorn, no sweats.. its too easy folks.. just dont buy the stuff that has high carbs, if you dont buy it, you cant snack on it during the day.. carbs from vegetables and fruits are ok. stop eating the carbs and the fat just melts away.

My Low Carb WaffleHouse story


no shit there i was (all real stories start with "no shit there i was", fake stories start with "once upon a time"... few years ago when i was doing real hard core no carb (kind of like now but back then i didnt know what the heck i was doing)... Waffle House had an All-You-Can-Eat promotion going on after 7pm...so after a workout Mrs. lexus and I stop in to do some damage. long story short i place the following order with waitress..."6 eggs scrambled and 2 orders of bacon" .. she responds in a somewhat snooty voice that they can only serve up 3 eggs per order and one side (bacon) per order. i guess to keep people for over ordering. alright, whatever.. so do the 3eggs and bacon.

brings the order few minutes later and as is customary she asks "is there anything else i can get you?" . i reply, "yes, id like another 3 eggs and an order of bacon".. ha..thought they would get me didnt they... she takes order to fry cook, those 3eggs and bacon didnt stand a chance, dealt with them in about 2 minutes.. she comes back with 2nd order, and again, "can i get you something else"... "yes id like 3 more eggs and order of sausage"..takes order to fry cook, i slam down 2nd set of eggs.... then get this shit.. the F'ing fry cook comes out and to have a look at me..doesnt say anything, just looks into the booth we are sitting in... That F*cker came out to size me up, wondering who the hell this T-Rex was eating up all the eggs.. Told mrs. lexus.."you see that shit"... i even ordered another 3eggs and bacon after that just to get an even dozen after mr. cook disrespected me like that. so bottom line, i ate 12 eggs, 9pieces of bacon, 3 pieces of sausage in that sitting.

Not even messing around for Dinner tonight

not messing around with anything fancy tonight for dinner since i have all those eggs ... All Those Eggs , just going to scramble up 8 .. boom bam done. dozen cost 75cents, so this dinner is about 50 cents.

8 eggs = 560calories and no carbs. too easy

Mrs. Lexus being a team player and making an omelet for her dinner to use up all those eggs we got this weekend  --->>> Pile of Eggs.. it started out as an omelet.. ended up as a mish mash scrambled egg platter.. good try though.  Eggs, green peppers, cheese... 1carb... too easy.

Crazy, Did i buy Too many Eggs?

look at this... jackpot at local grocer..marking down these cartons of eggs to move fast. 75cents for dozen eggs. guess ill be eating eggs for breakfast, lunch and dinner for the rest of week. Scramble up 4-5 eggs, add some of this taco meat --->>>Breakfast meat recipe .. some hot sauce, maybe some cheese.. damn.. no carb meal. Hard boil up a few dozen. $12 for 16dozen eggs, nahh..maybe i should pay $3.99 for a dozen of the cage free super eggs instead

Low Carb Bacon Cheeseburger Meatloaf

another low carb recipe, a twist off a traditional meat loaf recipe:

Ingredients:
- 2lbs ground beef
- half onion chopped fine
- 1/4 cup bread crumbs
- 2 eggs, beaten
- 1 tablespoon black pepper
- 3 slices cheese
- 1/2 cup shredded cheese
- 5-6 slices of bacon, uncooked
1. Combine the ground beef, eggs, pepper, onions in large bowl.. see that cool meatloaf pan i picked up at walmart? spray edges with Pam. Preheat oven to 375
2. Put about 2/3 of beef mixture into pan and shape it so it has a depression in the middle, deep enough to fit the shredded cheese. Pour in the shredded cheese
3. Add the rest of the beef on top and press down a bit on edges so cheese will not ooze out. Layer on the bacon slices. Run them in the direction of how you are going to slice up the loaf
4. Bake for 50 minutes. Then add the 3 pieces of cheese on top and bake additional 10 min

When finished baking remove with those cool handles and transfer to plate to cool. Meatloaf has always been one of those recipes that tastes better the next day so all the juices get soaked up in the meat. Optional ingredients to add depending on your tastes: finely chopped jalapenos, mushrooms, bacon pieces, green peppers.

Cut up into 5 servings (cut right along the bacon strips). Carbs will be about 5grams per serving from the bread crumbs. This is lunch for mrs. lexus for the week.
