Low Carb Cheesy Beef Bake

pretty simple recipe to whip up in under an hour

Ingredients:
- 5eggs
- 2 green peppers chopped
- 1 onion chopped
- 3-4 jalapenos chopped
- bag chopped spinach
- 1-2 cups of cheese
- 3lbs of ground beef
- salt / pepper
- optional: chili powder / taco seasoning packet

1. Brown ground beef in wok, drain liquid as it accumulates.
2. when beef has just a little pink left, add the chopped green peppers, onions, jalapenos.. cook on medium 5-6 minutes until tender. Then add the spinach.. cook additional 5 minutes until heated

3. add salt / pepper to taste, then pour this mixture into a baking dish. preheat oven to 350.
4. in seperate container, wisk up the eggs. add the cheese on top of the beef mixture.

5. pour the egg mixture on top of the cheese evenly. bake for 20 minutes.

6. divide up into servings or tupperware... i will either be adding some hot sauce or few tablespoons of low carb pasta sauce when i eat this.. almost no carbs in this.. carbs from vegetables are ok to eat. too easy

Low Carb Slow Cooked Chili

starting to get cold out there, time to get some low carb chili recipes going. just because its cold doesnt mean you have to eat crap.. low carb year round baby.

Ingredients:
- 3lb ground beef .. can substitute 2lbs beef and 1lb of JimmyDean type sausage
- one chopped onion
- 2 cans of chopped or diced tomatoes
- 1 can of tomato sauce
- 2 teaspoons of chili powder
- 2 teaspoons of cumin
- 2 teaspoons of oregano
- 1 can of chili beans
- optional: packet of taco seasoning mix, jalapenos

1. in wok, cook ground beef. drain liquid as it accumulates. when meat has just a little pink left, add the onions.
2. in either a large crock pot or larger pot, pour in the meat mixture when no more pink and add remaining ingredients..pretty simple.. stir and cook on low for about 3 hours. stirring every 10 minutes or so
3. cant get easier than that. im increasing the meat and reducing the amount of beans to keep the carbs low. will get you about 10 servings with carbs about 4-5 per serving... top with shredded cheese.

Low Carb Bacon Chicken


Ingredients:
- 4 chicken breasts, rinsed
- pack of bacon
- can of cream of celery soup
- 1/4cup milk
- salt and pepper

1. in small bowl, combine the soup and the milk. add teaspoon pepper to soup mix. Preheat oven to 350
2. wrap the chicken breasts in 2-3 strips of bacon and place in baking dish.
3. Pour the soup mixture over the chicken.
4. Cover with tin foil and bake for 35 minutes. Then remove foil and bake additional 15minutes to brown the bacon.
5. when serving, spoon some of the soup over the chicken.. you will get about 5-6 carbs per breast because of the soup. experiment with other types of "cream of" soups.. top with some shredded cheese if you want.

Low Carb No Slack Chili

modified a Chili recipe to be lower carb..more meat / less beans

Ingredients:
- 3lbs ground beef
- one large onion, chopped
- 1/2 cup of jalapenos, chopped
- one can kidney beans
- two cans stewed tomatoes, ok to substitue peeled or diced tomatoes
- one can tomato sauce
- one tablespoon minced garlic
- 3 tablespoons pepper
- 2 tablespoons garlic salt
- 2 tablespoons red pepper
- 3 tablespoons chili powder

1. in Wok, brown the ground beef. drain of liquid as it accumulates. when there is only a bit of pink left, add the chopped onion and jalapenos and cook additional 5 minutes.
2. Add the remaining ingredients and simmer on medium low for about 60 minutes. stir every 10 minutes.
3. Let cool and tupperware or serve.. top with your favorite shredded cheese. Too easy.

The original recipe is 2lbs beef, 2 cans kidney beans, one can chili beans.. all those beans jack up the carbs so using only one can of beans and increasing the beef this will make about 6-7 servings like this bowl and about 5carbs each bowl.. too easy, stop being a slave and stop eating all that refined food..the breads, noodles, hamburger helper crap. thats where all the carbs are coming from and thats why you cant lose that weight.

Walgreens extreme couponing and Chick-Fil-A

13aug - remember that extreme couponing trip i made to walgreens few day ago..spent $6.99 and got $6.99 in reward bucks back? swung by the walgreens next to the gym last night..found exactly what i was looking for.. eggs on sale for 99cents.. snagged 6 dozen and a pack of turkey bacon.. for a total bill of $7.23.. minus the $6.99 and this order was 23cents.. dont be ashamed to save money. so i essentially paid walgreens for items i would have bought anyway(the eggs) and got the free items thrown in from last week.



8aug - made a few stops on way back from the gym today. did some extreme couponing..ie free stuff.  first stop, Walgreens next to the gym:

- some kind of Lanacane first aid itch relief spray, on sale for $6, get a $6 register reward coupon
- lipton diet green tea (no carb of course), 99cents, get a .99 cent register reward coupon.. and note to Lipton.. make the bottle shaped so it will fit into a cup holder in the Lexus..thanks

Paid $6.99 and got $6.99 in reward coupons to be used a later date.. so free stuff.  there were a few other items i could have "bought" for free but have no need for tampoons or 3day diet booster (which sounds like it would just make you crap your guts out)... all these deals are available via following a few people on twitter that do the hard work of discovering the deals each week at places we all shop.. no need to do all the heavy lifting yourself.

Stop #2 at Chick-Fil-A
- like i posted previously, i had a coupon for a free chicken sandwich for completing an online survey. Got it to go and happened to fill the bag with a bunch of lite Mayo packets... again Free.

When i got home, removed the bun as usual and threw into the back yard for the birds to chow down on. Cut up the chicken into tiny pieces and did something never attempted in the history of man.. mixed this cut up chicken with 4 scrambled eggs and some hot sauce.. damn that was good.. likely some carbs in the breading of the chicken but free is free.

Low Carb Oven Ranch Chicken

another almost no carb chicken recipe:
Ingredients
- 4 chicken breast halves, rinsed, patted dry, and pounded flat
- 1/2 cup of bread crumbs or equal amount of Parmesan cheese
- 1 packet of Ranch Salad dressing mix
- 1/2 cup sour cream
1. Combine the breadcrumb / Parmesan Cheese mixture and the salad dressing mix together in shallow dish or tupperware. In another dish , spoon out the sour cream

2. Spray a broiler pan with non-stick coating. i will be using a toaster oven for these two  breasts. Preheat oven to 375.

3. Dip the chicken breasts into the sour cream , coating well. then into the crumb mixture, turning to coat well and put on broiler pan. Bake for 30-35 minutes or until juices run clear.. cut into thickest part to verify no pink.

4. Serve or tupperware.. you can also do this with chicken fingers but cut down on the bake time a bit.. if you use the Parmesan instead of the breadcrumbs it will be about 1-2 carbs per breast. salt/pepper to taste.

Low Carb Chicken Broccoli Divan

Lunch for the week

Ingredients:
- 4 chicken breasts cut into small pieces
- bag of broccoli flowerets, thawed or use 3 cups fresh chopped broccoli
- 1 can Broccoli Cheese soup
- 8oz bag of shredded cheese
- breadcrumbs
- parmesan cheese
- half cup milk (im using the dry instant milk)

1. in wok, cook the chicken until done, im adding 1/3 packet of a taco seasoning packet to the chicken.

2. While chicken is cooking, in a bowl, combine the soup and milk. Put the broccoli into a large bowl, be sure to drain the bag of broccoli before pouring, will have few tablespoons of water in it.Preheat oven to 400.  Pour the cook chicken into the broccoli then add the soup mix and stir to coat. Spray  a 2quart baking dish with non-stick spray and then pour chicken mixture into it

3. sprinkle on top about 2-3 tablespoons of bread crumbs followed by about 1/3 cup of parmesan cheese.
4. Now add your favorite shredded cheese. i will be using a Chedder PepperJack mix for this batch.
5. Bake for 20 minutes.
6. Blamm. look at that.. will be about 5-6 carbs per serving mainly from the soup. Lunch for the week.

Double Bicep Burger

one of my first recipes from years ago

Ingredients:
- 2lbs ground beef
- 2 eggs
- one onion chopped very fine
- one or two jalapenos chopped very fine
- two teaspoons minced garlic
- two tablespoons soy sauce
- two tablespoons Sherry cooking wine

1 . nothing fancy here, combine all ingredients in large bowl, form patties and george foreman grill.

2. boom bam done, better than that no taste burger you get in fast food joint.. im topping with some mayo, tacobell hot sauce and a slice of pepperjack cheese today.. salt/pepper to taste. about 1-2 carbs each patty if you add cheese. skip the bun, thats where all the carbs are. too easy

delayed Chick-Fil-A Appreciation Day

was with em in spirit on 1aug, but did not have time to wait for an hour to get served when i drove by on way back from gym. so made my delayed appearance to support the local store today on way back from haircut this morning.  cant say i really enjoy eating this type of food anymore since going no carb last year, but i needed to stock up on some lite mayo packets anyway since a hurricane might be entering the Gulf next week.. picked up a sausage egg and cheese biscuit. doesnt even look too tasty, used 2 forks to scrape the high carb biscuit off and ate the eggs (that were perfectly square) and the sausage...threw the biscuit in the back yard for the birds. best part was on the receipt was a section to complete a survey online and receive a code for a free chicken sandwhich.. like getting handed $2.75. will be eating that with no bun plus my own cheese, mayo, pico

had brief small talk with owner/manager while waiting. she said despite the lines wrapped around the building on the 1st, "everyone was so friendly and patient".. i find that refreshing after reading comments from the "other side" of the debate encouraging chickfilA haters to be disruptive, rude, and "bully stores". what you stick up your butt is your business. if you want to marry another man, knock yourself out.. but if you get to marry another man.. i should have the right to marry more than one woman.

thanks to the Krazycouponlady for this info again, picked up some free stuff at walgreens since its right next to the gym:

- bottle of Omega3 supplements, retail $15 (thats crazy), free with $15rebate
- bottle of Vitali-T-Aid, retail $20, free with $20 rebate..dont know what it does but its free
- Cortaid itch cream $2.99 , free with $2.99 rebate, plus $1.00 coupon so $1.00 moneymaker
- Listerine cavity rinse, $2.99 then $1.00 coupon, then $1.00 register reward, net .99cents

so with the moneymaker from cortaid, this entire purchase is free after the rebates. to get the rebates, pick up the monthly coupon booklet near the front door, info for rebates is in there, can even do it online, no having to mail in UPC codes and receipts.... i like free

Low Carb BBQ Topped Meat Loaf

another tasty meat loaf recipe with almost no carbs

Ingredients:
- one packet of instant onion soup mix
- 2lbs ground beef
- half an onion chopped fine
- 2 eggs
- 1/4cup bread crumbs
- 2 tablespoons parsley
- 1 teaspoon oregano, basil or thyme
- 1 teaspoon pepper
- half teaspoon salt
- low calorie / low carb BBQ sauce

1. Preheat oven to 375. Combine all ingredients except for BBQ sauce. Spray meatloaf pan with non-stick spray. 
2. Put mixture into meatloaf pan and bake for 45 min

3. after 45 min, remove and spoon on the BBQ sauce to coat the top. bake additional 5min.
give you about 5-6 servings with about 6 carbs each mainly from the breadcrumbs.

Chicken Parmesan Personal Pizzas

If you do a cheat day or a cheat meal every few weeks, here is a good pizza recipe

Ingredients
- either a 3 pack of personal pizza crusts or one big one
- mozzarella cheese
- parmesan cheese
- 2 chicken breast, previously grilled, cut up into tiny pieces or can use the chicken breast meat that comes in a can if you are in a hurry
- 1/2 cup Ragu "no sugar added" pasta sauce
- optional ingredients, chopped onions, black olives, sliced mushrooms, pepperoni slices, green peppers

1. for this meal ill be adding the onions, olives, mushrooms... combine the chicken, pasta sauce, onions, olives, mushrooms in bowl. easier that way..less hands-on needed. preheat oven to 400
2. add 1-2 spoonfulls of the sauce on the pizza crusts
3. Pour the toppings onto the crusts and spread around.. salt / pepper to taste now.. , sprinkle parmesan cheese on top now..dont be shy with it
4. Now add the mozzarella cheese. bake for 10-12 minutes or until the cheese is melted.
5. Blamm.

this is for one of those days that you are trying to impress your lady or taking a break from the low-carb lifestyle for a day. Better than calling Dominos Pizza too.

No Carb Dinner - Eggs and taco meat

you know you love eating breakfast for dinner.. since i just hit the jackpot at kroger getting all those marked down eggs..i jumped on my usual breakfast for dinner tonight.. my post gym meal

-5 medium eggs scrambled up with 1/2 cup of the previously posted Breakfast Taco Meat

just too easy, add some taco bell hot sauce on top.. and youve got yourself a no carb dinner. just like a breakfast burrito you get in the morning minus the high carb tortilla.

Corn skyrockets..eggs will cost more

yeah, im sure that will happen at some point. but if you keep your eyes open when you shop for groceries and dont just grab items off the shelves without looking at prices, you can really get some good deals, my weekly kroger run:

- 3 dozen large "Private selection, all natural eggs" ..the happy chicken, natural fed, high omega 3 type..usually sells for $2.99+ .. marked down to move fast at .99cents (expires on 29jun)
- 2 30pack kroger medium eggs for $1.89 each

if i have to pay full price for some reason, my cutoff is about 10cents per egg..so any sale or markdown event needs to be under that..

oh, and the Stayfree panty liners....free..on sale $1.99, coupon for $2.00.

stop being a slave and paying full price..thats what the corporate suits want you to do
